Kerala beef curry
Hope you get all the spices. if you dont make do with the things you have
Big onion - 2
Tomatoes - 4
Green chilly - 4
Ginger - 1 inch piece
Garlic - 5 pods
coriander powder - 2 tablespoon
Red chilli powder - 1 and half tablespoon
Black pepper powder - quarter table spoon
Turmeric powder - quarter teaspoon
garam masala - quarter teaspoon (optional)
vinegar - half table spoon
clove - 2 stick
cardamom - 2
cinnamon stick - 1 piece
cumin seeds - 4-5 seeds
Salt - as needed (for masala and meat)
slice and Mix all this in mixer/grinder till you get a paste.
To 1kilogram Fresh beef in cubes add the paste and mix and keep for 15 minutes inside the pressure cooker without switching on the flame for marination (you can keep more time for better taste). (also add two potatoes without skin cubed if you want.. i do that i like potatoes in my beef curry.. )
Then add just few spoons of water so that water level just reaches the top layer of beef (some people dont add water at all .. that is also good taste). close the pressure cooker and keep in medium high flame till you get first whistle then keep in low flame till you get 3-4r full whistles.. after fourth whistle wait till it cools.. check if it has cooked enough to your taste (amount of cooking may vary dependent on type of beef, freshness etc.. such beef may need longer cooking time).. if not cooked cook further..
garnish the curry with coriander leaves if you want. (i dont )
now you can serve with rice..
alternatively if you like fried beef .. then heat four table spoons of coconut oil in a deep frying pan in medium flame .. when its hot add mustard seeds.. the seeds will pop.. then add curry leaves .. after 30sec add the beef curry from the cooker and mix occasionally till it is fried to the consistency you want.
This curry is very spicy.. have fun...
